For Kate's birthday last year I made her Red Velvet Cupcakes. She was so decidedly unbirthday-ee last year, it was almost a non event. A tragic waste.
But this year the Taylor love of birthdays; Exhibit A and Exhibit B, may just have rubbed off on her a teensy weensy bit. Kate agreed to coffee and so I agreed to make a cake. I made a ridiculous six layer chocolate drenched cake, as you do.
A chocolate extravaganza of a cake for the girl who loves chocolate. And cake. Kate is undoubtedly going to be eating cake for a week, so if you visit her soon you may get to try some! Conveniently all the recipes you need to create this cake-stand-of-chocolate-heaven yourself are already here on Pomegranate Days.
I made one Red Velvet Cake, and one Chocolate Cake. Here is the one and only tricky part - are you ready? I left the cocoa out of the recipe for the Chocolate cake. Once the batter was ready I divided it into two. I baked the first half as a vanilla cake and then - and now listen up - I halved the cocoa powder amount given in the recipe (I was now working with half a cake do you see my math brain working?) and added it to the remaining batter and baked the second half as a chocolate cake.
The cake will definitely need some trimming and tidying up of all the layers to make them even. And then, just like Cake Boss, sandwich all the layers together with the cream cheese icing of the red velvet cake and then finish the whole thing in the chocolate ganache from the chocolate cake.
Because six layers of cake and a bucket load of chocolate ganache just didn't scream over the top to me, I added chocolate curls and the best ever Chocolate Chuckles from Tannie Woolie.
Kate ate her cake with beer. I am just kidding, it was ten in the morning, she will probably do that tonight.
